What each ingredient does

Coffee
Provides the flavor base, which develops its aroma and color as it roasts.
Butter
Adds fat that carries flavor and helps the roasted beans brown and glaze.

The step that matters

Stir continuously while roasting. Heat in a pan concentrates on the contact surface, so constant stirring keeps grains from scorching while the outside browns. Scorched grains taste bitter and burnt, and uneven roasting leaves some beans pale and others black.
