Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut the eggplant in half, leaving the rind intact.

  2. Score the flesh deeply, lengthwise and crosswise, without breaking the skin.

  3. Place each half in a pan with the scored side up.

Season and bake

  1. Season the eggplant halves with pepper and salt.

  2. Pour sweet oil or melted butter over the seasoned halves.

  3. Bake in a 300°F (150°C) oven until the eggplant is soft and the top is brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the body of the dish; its flesh turns soft and creamy as it cooks.
Sweet oil or melted butter
Adds moisture and fat, helping the scored top brown and the flesh stay tender.

The step that matters

Scoring the flesh without breaking the skin. Deep cuts let heat and seasoning reach the interior so it cooks evenly, while the intact skin holds the halves together and keeps moisture in during baking.

Swap the eggplant
