Why it works: Peach and sugar are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 2,308 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Preserved Peaches
Ingredients
Directions
Prepare the fruit
Cut the peaches longitudinally to the stone and twist to remove the stone.
Peel and weigh the peaches.
For each pound of fruit, weigh out 1 pound of sugar and add ½ cup of water.
Make the syrup
Dissolve the sugar completely before heating.
If using, add the beaten egg white or dissolved isinglass to the sugar mixture.
Heat the syrup until it boils, then skim off any scum.
Remove the syrup from heat and wash the kettle to prevent scum from boiling into the fruit.
Cook and pack
Return the syrup to the kettle, add the peaches, and boil for about 1 hour and 15 minutes until translucent.
Carefully remove the peaches and place them on dishes.
Let the syrup cool until lukewarm, then pour it over the peaches in jars.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Peaches
- Provide the fruit that is cooked until translucent and preserved in the syrup.
- Sugar
- Sweetens the fruit and, at this concentration, helps preserve it in the syrup.
- Water
- Dissolves the sugar to form the syrup that the fruit cooks in.
- Egg white
- Optional; when heated it coagulates and collects scum so the syrup can be skimmed clear.
The step that matters
Remove the scum and wash the kettle before adding the peaches. Scum left in the syrup can boil back into the fruit and cloud the syrup. Skimming and cleaning the kettle keeps the syrup clear and the peaches clean-looking.
