Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the sauce with fat, giving it a smooth, rich mouthfeel.
Flour
Thickens the liquid when cooked with the butter and boiling water.
Egg white
Adds body and lightness to the sauce as it is stirred in.
Madeira wine
Adds aromatic depth and a fortified wine flavour to the finished sauce.

The step that matters

Gradually add the beaten egg white. Adding egg white slowly while stirring helps it blend evenly instead of setting into lumps in the hot liquid.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, flour, sugar, egg, madeira wine):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Parsleyfits less well
