Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut the celery into small pieces.

  2. Finely chop the onion and stew it with the celery in half the milk, butter, and seasoning over low heat until tender.

  3. In a separate bowl, mix the remaining milk, eggs, and wheatmeal to create a batter.

Assemble and bake

  1. Once the celery and onion are tender, combine them with the batter.

  2. Grease a pie dish and pour the mixture into it.

  3. Bake at 350°F (175°C) for 1.5 hours.

Serve

  1. Serve with potatoes and tomato sauce.

What each ingredient does

Eggs
Bind the batter and help it set into a firm, sliceable pie.
Allinson fine wheatmeal
Provides the flour structure that thickens the batter and holds the filling together.
Milk
Adds moisture and softens the flour so the batter pours smoothly and bakes tender.
Butter
Adds fat for richness and flavour while the vegetables stew.
Celery
Forms the main bulk of the filling, contributing moisture and a savoury flavour.
Onion
Adds savoury depth and aroma to the stewed vegetable filling.

The step that matters

Stewing the celery and onion until tender. Celery releases water as it cooks, and raw or undercooked pieces stay fibrous and can thin the batter. Cooking them fully softens the vegetables and drives off excess moisture before they are combined with the batter.

Swap the onion

How well each one fits the dish's main ingredients (celery, milk, egg, butter, pepper):

  1. Capsicumfits better
