Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main savoury bulk and moisture that flavours the cutlet mixture.
Mashed potatoes
Add starch and body so the mixture holds together when shaped.
Breadcrumbs
Absorb moisture and give the cutlets a structured, crisp coating when fried.
Eggs
Bind the mixture and form a coating that browns during frying.
Butter
Adds richness and fat for frying, helping the cutlets brown golden.

The step that matters

Fry the cutlets until golden brown. Frying over moderate heat lets the egg coating set and the breadcrumbs crisp and brown. If the heat is too high the outside darkens before the inside is cooked, and if too low the cutlets absorb fat and turn greasy.
