What each ingredient does

Eggs
Provide the main body of the dish, adding protein structure and a firm, rich texture.
Milk
Forms the liquid base of the sauce, carrying the other flavours and giving a creamy body.
Butter
Adds fat for richness and a smooth mouthfeel in the sauce.
Wheatmeal
Thickens the milk into a sauce when heated, giving it body.

The step that matters

Thicken the milk with the wheatmeal. Wheatmeal must be smoothed into cold milk first so it disperses evenly; added directly to hot milk it clumps. Starch then swells as the sauce heats, thickening it.

Swap the parsley

How well each one fits the dish's main ingredients (egg, milk, butter, nutmeg, pepper):

  1. Cinnamonfits better
  2. Parsleythe original
  3. Cardamomfits about as well
  4. Allspicefits about as well

Fit is the average pairing score against egg, milk, butter, nutmeg, pepper. Candidates are from the same food group and used in at least 100 recipes.
