Almond Rice

Ingredients

Directions

Make the rice

  1. Cook the rice, butter, milk, sugar, and almonds until the rice is tender, about 40 to 50 minutes.

Mold and serve

  1. Butter a mold and sift the cinnamon evenly over it.

  2. Pour the cooked rice mixture into the mold and let it cool.

  3. If the rice does not turn out easily, dip the mold in hot water for 30 seconds, then turn out the rice.

  4. Accompany it with a sauce made of raspberry jam mixed with water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the body of the dish and sets as it cools, giving the pudding its structure.
Milk
Cooks with the rice to give a soft, creamy texture and moisture.
Butter
Adds richness and helps keep the cooked rice from sticking to the mold.
Ground sweet almonds
Add nutty flavor and body to the rice mixture.
Ground bitter almonds
Add a stronger, more pronounced almond aroma to the rice mixture.

The step that matters

Turning out the rice. Rice that has not cooled and set firmly can break or stick to the mold. Brief dipping in hot water loosens the butter layer at the surface so the shape releases cleanly, but longer soaking can melt the outer layer and soften the shape.

Swap the raspberry

How well each one fits the dish's main ingredients (rice, milk, butter, almond, sugar, cinnamon):
