Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potato flour
Thickens the milk into a smooth, firm pudding as its starch swells when heated.
Wheat flour
Adds body and helps the pudding hold its shape once cooled.
Cocoa powder
Provides the chocolate flavour and colour of the pudding.
Milk
Forms the liquid base that the starches thicken into a custard-like set.

The step that matters

Smoothing the flours with milk before adding. Starch lumps form if dry flours go straight into hot liquid, because the outer grains swell and seal off the inside. Mixing them into cold milk first lets the starch disperse evenly so it thickens smoothly.

Swap the potato

How well each one fits the dish's main ingredients (milk, flour, wheat, cocoa powder, vanilla, sugar):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Beetrootfits about as well
  4. Potatothe original

Fit is the average pairing score against milk, flour, wheat, cocoa powder, vanilla, sugar. Candidates are from the same food group and used in at least 100 recipes.
