Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the tapioca

  1. Soak the tapioca in cold water for 1 hour until it absorbs all the water.

Make the pudding

  1. Add the milk and sugar to the soaked tapioca and bring to a boil.

  2. Simmer until the mixture is soft and clear.

  3. Remove from heat and let it cool slightly.

  4. Beat the egg and mix it well with the tapioca mixture.

Bake and serve

  1. Pour the mixture into a greased dish.

  2. Bake in a moderate oven at 350°F (175°C) until golden brown.

  3. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in liquid to form the thick, soft body of the pudding.
Egg
Sets during baking to bind the pudding and add richness.
Milk
Provides the liquid and creamy richness that the tapioca cooks into.
Moist sugar
Adds sweetness and a slightly caramel flavour to the pudding.
Butter
Adds fat for a richer flavour and softer texture.

The step that matters

Simmering until soft and clear. Tapioca starch must cook fully to swell and turn translucent; undercooked tapioca stays chalky and firm, and the pudding will not set smoothly.
