Chocolate Cream

Ingredients

Directions

Make the custard

  1. Dissolve the chocolate in a few tablespoons of water over low heat until a thick, smooth paste forms.

  2. Add the milk, vanilla, and sugar, and bring to a boil.

  3. Thicken the mixture with the corn flour, then remove from heat to cool slightly.

  4. Beat the eggs well and gradually stir them into the thickened chocolate mixture.

  5. Return to low heat, stirring gently without boiling until well thickened.

Cool and serve

  1. Let the cream cool, then serve in custard glasses or over sponge cakes or macaroons.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the custard as they set when gently heated, and add richness.
Corn flour
Thickens the milk mixture into a smooth, stable custard.
Chocolate
Provides the main flavour and, melted into water, forms a thick base.
Milk
Forms the liquid base of the custard and adds creaminess.

The step that matters

Return to low heat, stirring gently without boiling until well thickened.. Egg proteins set when heated, but if the custard boils they can curdle and turn grainy. Gentle, constant stirring over low heat keeps it smooth while the corn flour thickens.
