Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and steep the pearl barley for 6 hours.

Cook

  1. Pour boiling water over the barley and stew it in a covered jar in a hot oven at 400°F (200°C) until soft and the water is absorbed, about 2½ hours.

  2. Halfway through cooking, add the sugar and lemon essence.

Set

  1. Pour the mixture into a mold to set.

What each ingredient does

Pearl barley
Starch from the grain thickens the liquid and gives the jelly its body as it cooks and cools.
Sugar
Adds sweetness and helps give the set jelly a smooth, firm texture.

The step that matters

Adding the sugar and lemon essence halfway through cooking. Sugar added after the barley has softened and absorbed water is less likely to dissolve evenly, and the set depends on the starch being fully cooked before it cools.

Swap the lemon

How well each one fits the dish's main ingredients (barley, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better

Fit is the average pairing score against barley, sugar. Candidates are from the same food group and used in at least 100 recipes.
