  2. Let it sit over the fire for a moment, then skim off any froth.

  3. Remove from heat and pour into a heated dish, discarding the last tablespoon of liquid.

  4. Wipe out the saucepan with a cloth, then return the oysters to it.

Finish and serve

  1. Add the butter, cracker crumbs, cayenne pepper, allspice, and salt.

  2. Place the saucepan back on the fire and add the cream.

  3. Cook until the oysters are just done, then serve in a warmed bowl.

What each ingredient does

Oysters
Form the main body of the dish and release savory liquor that flavors the stew.
Butter
Adds richness and a smooth, rounded mouthfeel to the liquid.
Cracker crumbs
Thicken the liquid slightly and give the stew body.
Fresh cream
Adds fat and creaminess, mellowing the seasoning and softening the flavor.

The step that matters

Cook until the oysters are just done. Oysters toughen and shrink when overcooked, becoming rubbery and losing their delicate flavor. Adding the cream and heating gently keeps them tender and the sauce smooth, so they should be removed as soon as their edges curl and they firm slightly.

Swap the allspice

How well each one fits the dish's main ingredients (oyster, butter, pepper, cream):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Celeryfits better
  4. Allspicethe original

Fit is the average pairing score against oyster, butter, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
