What each ingredient does

Cornmeal
Its starch swells in hot water and thickens the liquid into a soft, spoonable mush.

The step that matters

Gradually stir in the cornmeal. Adding cornmeal slowly into boiling water while stirring keeps it from clumping. Dry flour surfaces get wet at different rates, so dumping it in creates lumps that stay lumpy as the starch cooks.
