Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy body of the batter, giving the fritters a soft, tender interior.
Egg yolks
Add richness and fat, and help bind the batter together.
Egg whites
Whipped air through beating lightens the batter so the fritters puff and stay airy.
Lard
Frying fat that conducts heat and browns the outside of the fritters to golden.

The step that matters

Beat the batter until light. Beating incorporates air into the eggs, which expands during frying and keeps the fritters light. Under-beaten batter yields dense, heavy fritters.

Swap the potato

How well each one fits the dish's main ingredients (egg, cream, wine, lemon, nutmeg, sugar, orange):

  1. Arrowrootfits better
  2. Spinachfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against egg, cream, wine, lemon, nutmeg, sugar, orange. Candidates are from the same food group and used in at least 100 recipes.
