What each ingredient does

Split peas
Break down during long simmering to thicken the soup and give it body.
Carrots
Add natural sweetness and soft body that helps thicken the soup when mashed.
Turnips
Contribute mild sweetness and bulk, softening into the soup as it cooks.
Bones of roast beef
Release savory flavour and gelatin into the water, deepening the broth.

The step that matters

Stirring while the soup cooks for 2 hours. Split peas settle and scorch on the bottom of the pan during long simmering. Frequent stirring keeps heat even and prevents a burnt taste that would spoil the whole pot.
