Why it works: Butter and mushroom are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 12,525 recipes. Both carry trans-2-decenal, which smells waxy, orange. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 400°F (200°C).
Cover a dish with brioche paste.
Stew the macaroni in butter and water or broth until tender, then strain and cut into pieces.
Layer the macaroni at the bottom of the dish.
Make forcemeat balls and mix with butter, then place them on top of the macaroni.
Grate cheese over the forcemeat balls and macaroni.
Add sliced fowl, game, veal, or ox palates on top.
Layer blanched sweetbread slices and mushrooms over the meat.
Pour gravy over the layers to fill the dish.
Cover with more paste and bake until golden.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
