Fried Oysters

Ingredients

Directions

  1. Drain the oysters in a colander.

  2. Sprinkle with pepper, mix well, and refrigerate for 15-20 minutes.

  3. Roll each oyster in sifted breadcrumbs, then in a batter made from beaten egg yolks mixed with clarified butter or salad oil, seasoned with pepper and salt.

  4. Dip each oyster back into the batter if crumbs do not adhere, then fry in hot fat until browned, ensuring they are fully submerged.
