Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the custard

  1. Preheat the oven to 350°F (175°C).

  2. Combine bread crumbs, milk, egg yolks, salt, sugar, and lemon rind in a bowl.

  3. Bake the mixture until set, like a custard.

Top and brown

  1. In a separate bowl, beat egg whites to stiff peaks, then gradually add powdered sugar.

  2. Spread the lemon juice over the pudding, then top with the beaten egg whites.

  3. Brown the top in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the body of the pudding and soak up the milk to set into a soft custard.
Milk
Provides liquid that sets with the egg yolks into a tender custard.
Egg yolks
Thicken the custard so it sets when baked.
Egg whites
Beaten to stiff peaks to form a light meringue topping that browns in the oven.
Sugar
Adds sweetness and helps the meringue topping brown.

The step that matters

Beating the egg whites to stiff peaks. Egg whites hold air only when beaten fully and without any trace of fat or yolk. Under-beaten whites collapse and weep, while adding the powdered sugar gradually keeps the foam stable enough to brown on top.
