Plain Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the sweet milk and mix well.

  4. In a separate bowl, combine the flour, baking powder, nutmeg, and cinnamon.

Make the batter

  1. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  2. Fold in the chopped raisins.

Bake

  1. Pour the batter into two greased loaf pans.

  2. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a light, tender crumb and rich flavor.
Sugar
Creamed with butter to aid aeration and adds sweetness and browning.
Flour
Forms the structure of the cake as its proteins set during baking.
Baking powder
Releases gas in the batter, causing the cake to rise and become airy.
Sweet milk
Adds moisture and hydrates the flour to form the batter.

The step that matters

Stirring in the dry ingredients. Once flour meets liquid, gluten begins to form. Stirring only until just combined keeps the crumb tender; overmixing makes the cake tough and dense.
