What each ingredient does

Gelatine
Sets the coffee liquid into a wobbly, sliceable jelly as it cools.
Brewed coffee
Provides the main flavour and liquid that the gelatine sets.
Sugar
Sweetens the coffee and balances its bitterness.

The step that matters

Dissolving the gelatine after soaking. Gelatine must be fully dissolved in the warm coffee before setting, otherwise it can leave soft spots or grainy bits and fail to set evenly. Stirring until no granules remain ensures a uniform, firm jelly.
