What each ingredient does

Gelatine
Provides the gel structure that lets the liquid set into a firm jelly when chilled.
Sugar
Adds sweetness and balances the bitterness of the coffee.
Strong coffee
Gives the jelly its main coffee flavour and aroma.

The step that matters

Dissolve the gelatine fully. Gelatine must be completely dissolved in the hot liquid before setting. Undissolved granules or lumps leave specks and create weak, uneven patches in the set jelly.
