What each ingredient does

Sugar
Provides sweetness and, when boiled to a set point, gives the taffy its firm chewy structure.
Brown sugar
Adds sweetness and moisture, and as it cooks it sets the taffy's firm texture.
Molasses
Adds moisture, deep color and flavor, and keeps the candy soft and chewy.
Vinegar
Acidity partly breaks down sugar, which helps prevent grainy crystals and keeps the taffy smooth.
Butter
Adds fat for a tender texture and a rich, mellow flavor.
Vanilla
Adds aroma and flavor, added near the end of cooking so it stays fragrant.

The step that matters

Boil the brown sugar mixture until it hardens in water. Sugar candy depends on reaching the right concentration. Stopping early leaves the taffy sticky, while cooking too long makes it hard and brittle.

Swap the walnut

The recipe marks walnut as optional. How well each one fits the dish's main ingredients (sugar, molasses, vinegar, egg, butter, vanilla):

  1. Almondfits better
  2. Chestnutfits about as well
  3. Pecansfits about as well
  4. Walnutthe original

Fit is the average pairing score against sugar, molasses, vinegar, egg, butter, vanilla. Candidates are from the same food group and used in at least 100 recipes.
