The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Lemon and sugar barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm, tender jelly as it cools.
Sugar
Adds sweetness and body, balancing the sharpness of the citrus.
Oranges
Provide the main flavor and juice that gives the jelly its color and aroma.
Lemon
Adds acidity and bright aroma from its rind and juice.

The step that matters

Skim and strain the clarifying mixture. Skimming foam while boiling and straining through a jelly bag or fine sieve removes particles, so the set jelly looks clear rather than cloudy.
