What each ingredient does

Mealy potatoes
Their dry, starchy texture thickens the stock and gives the soup body.
Medium stock
Forms the liquid base that carries the potato flavour.

The step that matters

Gradually add the mashed potatoes to the boiling stock. Adding potato slowly and stirring keeps it from clumping, so the soup thickens evenly instead of forming lumps.
