Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the rice

  1. Boil the rice in milk until very soft.

  2. Add the butter and boil for a few more minutes, then set aside to cool.

  3. Beat the eggs well and stir them into the rice mixture.

Assemble

  1. Line a dish with puff pastry.

  2. Layer the rice mixture.

  3. Layer a thin layer of jam.

  4. Repeat layering until the dish is full.

Bake and serve

  1. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

  2. Serve hot or cold.

  3. If cold, pour boiled custard over it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the bulk of the pudding, softened in milk so it becomes creamy and tender.
Butter
Adds fat for richness and a smoother, more tender texture.
Eggs
Bind the rice mixture and set during baking, giving the pudding body.
Jam
Adds sweetness and fruity flavour between the rice layers.

The step that matters

Cool the rice before adding the eggs. If the rice is still very hot, the beaten eggs can scramble or curdle instead of blending smoothly into the mixture, leaving an uneven, grainy texture after baking.
