What each ingredient does

Turkey
Forms the main body of the dish, providing the meat that is roasted and served.
Pounded crackers
Bind the stuffing and soak up butter and juices, giving it body.
Butter
Adds fat and richness to the stuffing, keeping it moist as it cooks.
Egg whites
Help bind the stuffing together as they set during roasting.
Flour
Thickens the gravy and helps the basting liquid brown the turkey skin.
Sage
Adds a savoury, aromatic herb flavour to the stuffing.

The step that matters

Roasting gradually and basting constantly. Slow, steady roasting cooks the stuffed bird through without drying the meat, while frequent basting keeps the surface moist and helps it brown evenly.

Swap the marjoram

How well each one fits the dish's main ingredients (turkey, pepper, butter, egg, sage, flour, liver):
