Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard base

  1. In a saucepan, heat the milk and melt the butter in it.

  2. Stir in enough bread crumbs to achieve a light consistency.

  3. Beat in the eggs, salt, nutmeg, and sugar.

Bake

  1. Pour the mixture into a baking dish and bake at 350°F (175°C) for 30 minutes.

What each ingredient does

Eggs
Bind the mixture and set during baking to give the pudding its structure.
Bread crumbs
Absorb the liquid and give the pudding its soft, light body.
Milk
Provides the liquid that the bread soaks up and that the eggs set in.
Butter
Adds richness and a smooth, tender texture.
