Why it works: Apple and plum match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 404 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Preserves for Children

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Layer sliced apples, plums, currants, and gooseberries in a stone jar.

  2. Sprinkle enough brown sugar to sweeten the fruit well.

  3. Cover the jar with coarse dough.

Bake and serve

  1. Let it stand in a 300°F (150°C) oven overnight until the fruit is tender.

  2. Spread the preserves on slices of good home-made bread.

What each ingredient does

Sliced apples
Provide body and pectin that help the preserve thicken as it cooks.
Sliced plums
Add tartness and juiciness that balance the sugar.
Currants
Contribute acidity and concentrated fruit flavour.
Gooseberries
Add tartness and natural pectin to help the preserve set.
Brown sugar
Sweetens the fruit and draws out its juices during the long, slow cooking.

The step that matters

Covering the jar with coarse dough. The dough seals the jar so moisture stays in and the fruit cooks gently in its own juices over the long, low bake. A poor seal lets liquid evaporate, which can leave the preserve dry or scorched.

Swap the currant

How well each one fits the dish's main ingredients (apple, plum, sugar, bread):

  1. Pearfits better
  2. Apricotfits better
  3. Peachfits better
  4. Currantthe original

Fit is the average pairing score against apple, plum, sugar, bread. Candidates are from the same food group and used in at least 100 recipes.
