What each ingredient does

Eggs
Provide the protein base that firms as it cooks and then absorbs the pickling liquid.
Vinegar
Supplies the acidity that preserves the eggs and gives them their sharp, tangy flavour.
Garlic
Adds pungent aroma that mellows and infuses into the eggs during the long rest.

The step that matters

Sealing and resting the jars. The eggs must be fully covered by the cooled vinegar and sealed tightly so no spoilage organisms can grow. The month of rest lets the acid and spices slowly penetrate the egg whites and yolks, which is what produces the flavour.

Swap the garlic

How well each one fits the dish's main ingredients (egg, vinegar, pepper, allspice, ginger, clove):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Cardamomfits better
  4. Garlicthe original

Fit is the average pairing score against egg, vinegar, pepper, allspice, ginger, clove. Candidates are from the same food group and used in at least 100 recipes.
