Lemon Rice

Ingredients

Directions

Cook the rice

  1. Boil the rice in milk with sugar until soft.

  2. Transfer the rice to a pint basin or a blancmange mold and let it cool.

Make the lemon syrup

  1. Peel the lemon thickly and cut the peel into shreds about ½ to ¾ inch long.

  2. Boil the lemon peel in a little water, then discard the water to avoid bitterness.

  3. Pour ½ cup of fresh water over the lemon peel.

  4. Squeeze and strain the lemon juice, adding it and sugar to the water and shreds.

  5. Let the mixture stew gently for two hours.

Serve

  1. Once cooled, turn the jellied rice onto a dish and pour the syrup over it, ensuring the peel is evenly distributed.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Starch that softens in milk and sets into a firm, sliceable body when cooled.
Milk
Cooks with the rice to give a creamy, tender texture and a richer flavour.
White sugar
Sweetens the dish and helps the syrup taste balanced against the lemon.
Lemon
Provides aroma and acidity from the peel and juice, flavouring the syrup.

The step that matters

Boiling the lemon peel in water, then discarding that water. Boiling the peel first and throwing away the water draws out bitter compounds from the pith and oils, so the syrup tastes clean rather than harsh.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
