Head Cheese, or Brawn

Ingredients

Directions

  1. Boil the bony parts of the pig until the meat separates from the bone.

  2. Chop the meat finely and season it as you would for sausage.

  3. Add the chopped meat to the cooking liquid and tie it in a bag.

  4. Place heavy weights on the bag to press it.

  5. Once set, cut into thin slices and serve.
