Baked Dasheens
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Clean the dasheens with a stiff brush or coarse cloth and rinse in water.
Place the cleaned dasheens in a 350°F (175°C) oven, or parboil them for 5 to 10 minutes if they are large.
Cut very large dasheens in half lengthwise to facilitate baking.
Bake until done, testing with a fork.
Serve immediately in a warmed dish, covered with a napkin, and season with salt and butter.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
