Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard and whites lighten the pudding when folded in.
Potato starch
Gelatinises when heated with the milk, thickening the pudding to a smooth set.
Milk
Forms the liquid base of the pudding, which thickens as it cooks.
Sugar
Adds sweetness to balance the tartness of the lemon.
Lemon
Provides acidity and aroma from the juice and grated rind.

The step that matters

Cooking the custard in the double boiler. Stirring constantly keeps the egg yolks from scrambling against the hot pan. Starch thickens as it heats, so the pudding should be cooked only until thick and then removed to avoid a lumpy or grainy texture.
