Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

Make the batter

  1. Beat the egg yolks until thick and lemon colored.

  2. Gradually add the sugar while continuing to beat.

  3. Add the lemon juice and grated lemon rind.

  4. In a separate bowl, beat the egg whites until stiff and dry.

  5. Carefully fold the beaten egg whites into the yolk mixture.

  6. Sift the potato starch mixed with salt and gently fold it in.

Bake

  1. Pour the batter into an angel cake pan or deep narrow pan.

  2. Bake for one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites and yolks build the light, airy structure that holds the cake up.
Sugar
Sweetens the cake and helps stabilize the beaten egg foams.
Potato starch
Provides a tender, delicate crumb with less gluten-like firmness than wheat flour.

The step that matters

Folding the beaten egg whites into the yolk mixture. Egg whites hold the air that makes the cake rise. Folding gently keeps that air in, while stirring or deflating the foam leads to a dense, flat cake.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, lemon):

  1. Asparagusfits better
  2. Arrowrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
