Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites until stiff and dry.

  3. Gradually add the powdered sugar while continuing to beat.

  4. In a separate bowl, beat the egg yolks until thick and lemon colored, then add the flavoring.

  5. Gently fold the yolk mixture into the egg white mixture.

  6. Sift the potato starch and salt together, then cut and fold into the batter.

Pipe and bake

  1. Using a pastry bag or a paper cornucopia, pipe the batter into 4-inch long, 1-inch wide shapes on a baking sheet lined with unbuttered paper.

  2. Sprinkle powdered sugar over the shapes.

  3. Bake for 8 to 10 minutes until lightly golden.

  4. Remove from the paper using a knife.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff foam that gives the cookies their light, airy structure.
Egg yolks
Add richness and flavor while helping bind the batter.
Potato starch
Lightens the batter and gives the cookies a tender, delicate texture.
Powdered sugar
Sweetens the batter and stabilizes the whipped egg whites.

The step that matters

Fold the yolk mixture into the whites gently. Whipped egg whites hold their air only if handled gently; vigorous stirring deflates the foam, so the shapes will spread flat and bake up dense instead of light.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar):

  1. Sweet potatofits better
  2. Capsicumfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
