Sweet Peppers

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the peppers

  1. Preheat the oven to 400°F (200°C).

  2. Place the peppers in the oven and bake until the skins separate from the meat.

  3. Remove the skins from the peppers.

Pack and seal

  1. Pack the peppers solidly in glass jars or tin cans.

  2. Pour boiling water over the peppers and add 1 teaspoon of salt per pint.

  3. Put the rubber and cap in position, but do not tighten.

  4. Sterilize the jars: if using a hot‑water bath, 90 minutes; if using a water‑seal outfit, 75 minutes; if using a 5‑pound steam‑pressure outfit, 60 minutes; if using an aluminum pressure cooker, 40 minutes.

  5. Remove the jars and tighten the covers.

  6. Invert the jars to cool and test the seal.

Store

  1. Wrap jars with paper to prevent bleaching and store.

What each ingredient does

Red or green peppers
Form the main body of the pickle, becoming soft and tender after baking.
Coarse sea salt
Seasons the peppers and helps draw out moisture and flavor in the brine.

The step that matters

Sterilizing the jars for the full time. Sterilizing for the stated time at the correct method heats the contents enough to destroy harmful microorganisms, so shortening the time or underheating risks spoilage of the sealed jars.
