Why it works: Butter and milk are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓

Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 400°F (200°C).
Sift the baking powder and salt with the flour.
Cut in the butter until the mixture resembles coarse crumbs.
Mix in enough milk and water to form a stiff dough.
Turn the dough out onto a floured surface and divide it in half.
Roll out one half and spread it with the thinly-cut ginger.
Place the other half on top and cut into squares.
Brush the tops with milk and bake in the preheated oven.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
