Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Isinglass or gelatine
- Sets the liquid into a light, wobbly structure as it cools.
- Egg whites
- Whisked in, they trap air and give the set jelly its airy, sponge-like texture.
- Sugar
- Sweetens the dish and balances the sharpness of the lemon.
- Lemons
- Provide the citrus flavour and acidity, and their rind adds aroma.
The step that matters
Whisking in the egg whites. Add the whites only once the mixture has cooled and started to set. If it is too warm, the whites collapse and lose their air, and if it is too cold and set firm, they will not blend into a smooth foam.
Swap the lemon
How well each one fits the dish's main ingredients (sugar, egg):
- Vanillafits better
- Raisinfits about as well
- Lemonthe original
- Datesfits less well
Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
