Why it works: Cream and butter are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 41,516 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓
Pie of Sweetbreads and Oysters
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Boil the sweetbreads until tender.
Stew the oysters with pepper and coarse sea salt.
Thicken the oyster mixture with cream, butter, egg yolks, and flour.
Line the bottom and sides of a deep dish with puff pastry.
Place the oysters in the bottom of the dish, then cover with the sweetbreads.
Fill the dish with the gravy mixture.
Cover with puff pastry on top and bake at 400°F (200°C) until golden.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
