Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Adds sweetness and helps give the jelly its body.
Lemon juice
Adds acidity that balances the sweetness and brightens the flavor.
Wine
Adds flavor and aroma to the jelly.

The step that matters

Dissolve the gelatine fully before adding the other liquids. Gelatine only sets when it is completely dissolved and hydrated. Undissolved granules leave weak spots or grainy texture, so the mixture may not set evenly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, wine):

  1. Vanillafits better
  2. Applefits better
  3. Grapefits better
  4. Lemonthe original

Fit is the average pairing score against sugar, wine. Candidates are from the same food group and used in at least 100 recipes.
