Why it works: Peach and whisky work together. They rank in the top 16% of all ingredient pairs, and cooks put them together in 25 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Peach Preserves

Ingredients

Directions

Prepare the peaches

  1. Peel the peaches and cut them in halves.

  2. Make a syrup by combining 1 pound of sugar for every pound of fruit.

  3. Cook the peaches in the syrup until tender.

  4. Spread the peaches on dishes to cool.

Syrup and soak

  1. If the peaches are soft, pour some whisky over them while hot.

  2. Pour all the syrup back into the kettle and bring it to a boil.

  3. Pour the boiling syrup over the peaches and let it stand overnight.

Finish the preserves

  1. The next day, pour off the syrup and boil it down.

  2. Add the peaches back into the syrup and boil until done.

What each ingredient does

Peaches
Provide the fruit that softens and becomes the bulk of the preserves.
Sugar
Sweetens the fruit and draws out moisture to form a thick syrup that preserves it.

The step that matters

Boil the peaches until done after the overnight soak. Sugar syrup thickens as water evaporates during boiling, so stopping too early leaves a runny preserve, while overcooking can break the fruit down and make it tough or dark.

Swap the peach

How well each one fits the dish's main ingredients (sugar, whisky):

  1. Vanillafits better
  2. Applefits better
  3. Figfits better
  4. Peachthe original

Fit is the average pairing score against sugar, whisky. Candidates are from the same food group and used in at least 100 recipes.
