Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mold

  1. Cut a slice of bread to fit the bottom of a well‑buttered round mold, and cut strips for the sides.

  2. Dip the bread in clarified butter or spread with cold butter.

  3. Place the round piece at the bottom and arrange the strips up the sides, overlapping slightly.

  4. Brush the interior with egg white to firm the case.

Fill and bake

  1. Fill with apple marmalade and a little sherry, then cover with another round piece of bread brushed with egg.

  2. Press down slightly to adhere, place a plate on top, and bake in a brisk oven at 400°F (200°C) for 40 to 50 minutes.

Serve

  1. Turn out onto a dish, sprinkle with sifted sugar, and pour melted apricot jam around it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Forms the crisp golden shell that holds the filling in shape.
Clarified butter
Adds fat that helps the bread brown and crisp in the oven.
Apples
Provide the main filling, adding moisture and fruit flavour.
Apple marmalade
Concentrates apple flavour and sweetness into the filling.
Egg
Egg white firms the bread case and egg brushing helps the top set and brown.
Sherry
Adds aromatic depth and a little acidity to the apple filling.

The step that matters

Buttering and sealing the bread case. Bread must be fully coated in butter and firmed with egg white so it browns and crisps rather than soaking up apple juices and collapsing during baking.

Swap the apple

How well each one fits the dish's main ingredients (bread, butter, sherry, egg):

  1. Figfits about as well

  3. Applethe original
  4. Apricotfits about as well

Fit is the average pairing score against bread, butter, sherry, egg. Candidates are from the same food group and used in at least 100 recipes.
