Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the mixture as it cools into a sponge.
Egg whites
Whisked into the mixture to trap air, giving the sponge its light, airy texture.
Sugar
Sweetens the dessert and balances the sharp acidity of the lemon juice.
Lemon juice
Provides the tart lemon flavour that defines the dish.

The step that matters

Let it cool until it begins to stiffen. The mixture must thicken slightly before the egg whites are added. If it is still hot and runny, the whites will not hold their foam and the sponge will be dense rather than light.

Swap the lemon
