Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Roll out the puff-paste thinly.

  2. Place half of the paste on a baking sheet and spread your chosen jam evenly over it.

  3. Cover the jam with another layer of thin paste, pressing the edges together.

  4. Mark the surface with a knife to indicate where to cut after baking.

  5. Bake in a 400°F (200°C) oven for 20 minutes to ½ hour.

  6. A few minutes before done, remove from the oven, brush with egg white, sprinkle with sifted sugar, and return to the oven to color.

  7. Once cooled, cut into strips about 2 inches long and arrange them in a pyramid on a dish.

  8. Serve with flavored whipped cream poured in the center.
