What each ingredient does

Plums
Provide the fruit, pectin and tart flavour that form the body of the jam.
Loaf sugar
Sweetens the jam and draws moisture from the fruit, helping it thicken as it cooks.

The step that matters

Boil rapidly while stirring constantly. Fast boiling concentrates the sugar and fruit so the jam sets, while constant stirring prevents scorching on the bottom of the pan. Skimming off scum keeps the finished jam clear and clean-tasting.
