What each ingredient does

Vegetable marrows
Form the body of the soup, breaking down into a smooth purée when cooked and sieved.
White stock
Provides the liquid base and seasoning that the marrows cook and soften in.
Cream
Adds richness and a smooth, silky texture to the finished soup.

The step that matters

Stir in the cream just before serving. Cream added to a very hot soup can curdle or separate if it is boiled for long, so it is added at the end and the soup is kept hot without boiling hard.
