What each ingredient does

Rice
Is the starch that softens and swells in boiling water to become the dish.
Water
Cooks the rice by heat and hydrates the grains as they soften.

The step that matters

Drain the water thoroughly. Excess surface water left on the grains makes the rice soggy and clumped, so draining well lets the steam dry the grains and keeps them separate.
