Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Give the pudding its body and a smooth, thick texture when rubbed through while hot.
Butter
Adds richness and fat, giving the filling a tender, smooth mouthfeel.
Egg yolks
Thicken and set the filling while adding richness and colour.
Sugar
Sweetens the filling and helps create a smooth, tender set.
Egg whites
Folded in to lighten the mixture and add structure as it bakes.
Lemon
Adds aroma from the rind and acidity from the juice to balance the sweetness.

The step that matters

Gently fold in the beaten egg whites. Egg whites hold air only when beaten to a stable foam. Folding gently keeps that air in the mixture, so the pudding bakes up light rather than dense and flat.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg, sugar, lemon):

  1. Asparagusfits better
  2. Leekfits better
