Fruit Pie

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

Assemble the pie

  1. Make a pie crust and place a layer in the bottom of a two-quart tin basin.

  2. Add a two-inch thick layer of chopped sour apples.

  3. Layer chopped raisins on top of the apples.

  4. Sprinkle sugar, pieces of butter, and spices over the raisins.

  5. Repeat layering with crust and fruit until the basin is full.

  6. Cover with a top layer of crust.

Bake and serve

  1. Bake for two hours.

  2. Once done, turn the pie bottom side up on a plate and sprinkle fine sugar over it before serving.

  3. This pie is just as good when warmed again.

Provide the main fruit body and tartness that balances the sugar.
Raisins
Add concentrated sweetness and chewy texture through the filling.
Sugar
Sweetens the filling and helps draw moisture out of the fruit.
Butter
Adds richness and fat that carries flavour through the filling.
